
My partner has requested this one a few times; it's one of his favourite cakes and always so cautious of how it will turn out, so here you go. I'm sharing the recipe with you all:

Cake Ingredients:
- 225g self raising flour
- 225g of butter
- 225g of sugar
- 1 and a half lemons
- loaf tin
- cake liner or baking paper
Topping ingredients:
- 1 and a half lemons
- 85g caster sugar

Method:
First up, I make this slightly stronger than most; you can add or remove as much lemon as you want.
- Preheat oven at 180c/160c fan
- Line a bread tin with baking paper or use a tin liner
- Zest the lemons or lemon depending on how many you want to use
- Mix together the butter and caster sugar until pale and creamy
- Add the eggs one at a time until fully mixed
- Sift in the flour and zest into the mixture until fully combined
- Pour into the lined loaf tin and place in the oven for 45-50 minutes
- Check with a knife or skewer to see if it's fully cooked inside; if not, leave it in for a little while longer
- Whilst it's baking, mix together the caster sugar and juiced lemon or lemons to make into a paste
- Once the cake has come out of the oven, leave around 5 minutes, poke holes in it, then pour the paste mixture on top. I like to slice lemons and place them on top.
- You can serve warm or cool, but it's delicious either way.
